We have created a maturation chamber that allows for the aging of pork! Here we introduce a case study of a custom showcase for fresh meat.

We would like to introduce a case study of the "custom showcase for fresh meat" implemented at Marumi Pork Miyazaki Store. They were selling it as Miyazaki brand pork, but most of it was leading to spoilage. During this time of concern, they visited our exhibition, which led to the introduction of the aging chamber. "We have noticed a significant change in the quality of fat in the pork aged since we installed the aging chamber. [Aging Warehouse Delivery Example] Minami Aoyama 36 Steak

Since it is impossible to deliver via the stairs, part of the work will be done on-site! This is a common situation, so please feel free to consult with us.

We would like to introduce a case where we supplied a dry aging chamber and showcase to Minami Aoyama 36 Steak. We set up a stage in a corner of the store for the showcase and dry aging chamber, allowing customers to see and choose their ingredients. Since the location is on the 9th floor of a building, we started with a site inspection, and due to the difficulty of moving items up the stairs, part of the installation was done on-site. Such situations are common in urban areas and busy districts, so we would be happy to discuss any inquiries you may have. We would like to introduce a case where we delivered a maturation chamber to Kakuzukushi Nikutell located in the B1 of Roppongi Grand Tower. The maturation chamber we delivered is suspended from the ceiling. The conversation started with the suggestion of hanging it, and it quickly progressed from there, including the design of the case and issues related to reinforcement during suspension. However, I felt reassured that we were on the right track when the president expressed his approval during our conversation before the pre-opening. Dried Aging Warehouse Delivery Case (Jumping Cow)

Introducing a case where we delivered a drying and aging warehouse to the Jumping Cow!

This is an introduction to the drying aging chamber we delivered to Nyu-gyu. Dry aging and drying are both forms of aging, but they differ in humidity and airflow. Therefore, we have modified the equipment, such as the fan motor from the cooling unit, for dry aging and drying. Since it is a drying chamber, the humidity is set higher. While it is different from a constant temperature and humidity chamber, it is designed uniquely to achieve high humidity without external humidification.

[Case Study] Delivery of Aging Cellar to ANA InterContinental Hotel

Cleared strict standards! Here are examples of delivered aging warehouses.

We delivered a maturation chamber to ANA InterContinental Hotel, The Steakhouse. The conditions for this chamber were an average humidity of 80% with an internal temperature of 1°C, and air circulation within the chamber. It is honestly difficult to meet these conditions with a maturation chamber that has a large internal volume and a high height. Simply adding a humidifier would cause the internal cooler to frost up, leading to the growth of bacteria. This was made possible by our company, which has numerous achievements. Additionally, we received a request from the kitchen side to monitor the internal conditions, so we used double-sided glass. The chef can always check the inside of the maturation chamber through the glass on the back. Aging Warehouse Delivery Case "Kakuzukushi Rt"

We would like to introduce a case where we supplied a maturation chamber to Kaku no Shin Rt, located on the second floor, a 3-minute walk from Yoyogi Hachiman Station. Kaku no Shin is, of course, a restaurant where you can enjoy aged meat. The concept of the maturation chamber in this store is European (especially French). A few months before the opening, the president personally visited famous butchers and farms in France, holding numerous meetings until the final design was established. Ribs and thighs, as well as shank meat, are controlled for temperature, humidity, and airflow, increasing in deliciousness day by day. We would like to introduce a case of delivering a maturation chamber to Kaku no Shin R+ and Kaku no Shin 82. Typically, shelf lighting is often installed at the back of the shelf, which can make the products appear dark from the customer's perspective. During my many years working at a showcase manufacturer, I always thought about how much more beautiful the display could be if the lighting was directed from the front. Although I had some anxiety about this being the first implementation, the lighting was praised as the best part of the setup. The upper lighting illuminates the meat from below, allowing the true color of the meat to be beautifully reproduced. We would like to introduce a case where we supplied a maturation chamber to Mama Toko Kitchen Baton. It was our first time drying Holsteins, but we believed that taking on this challenge would contribute to our growth, so we proceeded with trial and error during the construction. Since Holsteins have a high moisture content, a fan is typically used for moisture activation. However, we aimed for a strong and rich flavor with a weak aroma by using our original method of employing a fan only during the dehumidification process. Aging Warehouse Delivery Case: Saito Farm

Aged meat from Sakaeya is now available for purchase in Azabu-Juban! We will introduce examples of our aging storage delivery.

We would like to introduce a case where we delivered our "aging chamber" to Saito Farm. The aging chamber we delivered measures W1,800×D750×H2,430mm (23 cm taller than the standard height), and naturally, there was only one place it could fit, requiring major construction to remove the glass at the front of the store to get it in. With this size of aging chamber, it can hold approximately 400 kg of aged meat. Since there was a request to place the showcase next to the cash register, we opted for a sliding door. With a sliding door, it allows for customer service where customers can purchase while standing right next to the showcase and receiving product explanations. Inside the showcase, grass-fed beef is displayed. It's easy to see where each type of meat is located, allowing for quick opening and closing of the door!

We would like to introduce a case where we delivered a dry aging chamber to Iwate Nuff de Pap. Since they wanted to connect the kitchen and the store, we used double-sided glass and added a door on the kitchen side to ensure that customers cannot see inside the kitchen, putting extra effort into the glass design. While the kitchen is not visible from the store, the interior of the chamber is clearly visible from the kitchen, making it easy to see where each type of meat is located, allowing for quick opening and closing of the door.
